Puerto Rican Stuffing 

3 green plantains

1 yellow plantain

5 garlic cloves crushed 

1/2 pack thick cut bacon sliced into small pieces  

1 large yellow onion chopped 

Salt pork belly 12oz sliced into very small pieces

Salt and pepper to taste

In a frying pan fry pork belly and bacon until crispy. Add onion and garlic until brown. Set aside.

Now peel the plantains and slice into 1 inch. Fry until tender in the middle and a little golden on the outside. Drain and mash all the plantains in the bacon and pork mixture. Add salt and pepper to taste. Serve warm.

My famous Jamaican curry chicken. Whole chicken cut up small, wash and clean. In a bowl, season chicken with curry, black pepper seasoning, salt, cayenne pepper, and a dash of cilantro. Also diced onions, peppers, red and green tomato, scallion and thyme. Mix it all up in the bowl with some water making it nice and rich. Then in a saucepan, add vegetable oil mixed with a dash of curry. (Make sure the oil is hot). Put pieces in one at a time and stir until lightly browned. Then all the seasoning that’s left in the bowl, pour over the chicken. Stir and let simmer until cooked.

I’ve had a chance to speak with a lot of people over the years, but none more, let’s say, bizzaro but great, than with David Lee Roth of Van Halen. He had, the year before appeared at The Globe Theater in Norwalk and we spent some time with him in his tour bus after the show in the Issac street parking lot. I had worked at Greenberg’s clothing store in high school, and little did I know someday I’d would be in the spot where I parked my VW bug to work at Greenberg’s, at the same spot where David Lee’s tour bus would be, with me in it! This chat with David is about his then upcoming show at Foxwoods that year. Buckle your seat belts for this one!
