HOLIDAY CARROT LOAF (EVEN THE GRANDKIDS LOVE IT)
1 1/4 sticks unsalted butter room temp
1/2 cup light brown sugar
2 egg separated room temp
1/2 tsp. salt
1 tablespoon cold water
1 tsp lemon juice
1 cup flour
1 tsp baking powder
1/2 tsp. baking soda
2 cups grated carrots – room temp

Cream butter and sugar
add all except carrots and egg whites
fold in carrots carrots
beat egg whites till stiff fold in
grease a small bundt pan and coat with bread crumbs put batter in and top with more bread crumbs
bake – 350 – 15 minutes
375 – 30 minutes

I Hate Being Cold.

I Hate Being Cold.

I hate being cold.   And it’s worse when you can’t be anywhere where you can warm up.  I wasn’t like this sledding down the hill at Nathan Hale school in Norwalk as a kid.   Or Birchwood Country Club in Westport.  We all expected to freeze.  And then with my 4 kids, it was never cold being outdoors with them growing up.  Then, whatever happened happened.  All of a sudden, cold became an enemy.  Even sitting on the ice cold bleachers as all the kids were in Trumbull High School Marching Band wasn’t bad.  Hand warmers became friends.  But now, even taking out the trash the night is a cold walk.  Layers don’t even do the trick anymore.  Give me a beach.  And something cold to drink.  Then I like cold!

There’s nothing like a dog. How true it is when you hear, no matter what, your dog will always greet you at the door, wag their tail, and be the happiest thing, just because you opened the door! Our dog Toby is getting old. He’s 12. I think it’s like us when we look in the mirror. You seem a bit shocked and say who is that? I believe Toby is the same, He has always been like a puppy, and he still acts like one. He’s getting grey, hard of hearing, but still is just a happy dog. Thank you Toby!
